      Lived on the US Naval base Gauntanamo Bay Cuba, we had Jamacians there as civilian workers… they made this for us and it is GOOD! Laugh at the name, everyone does!

      ~Jerked Chicken~

      You need chicken and lemon juice for this part… (I usually buy the chicken thighs)

      Preheat oven to 350 drgees F. Wash chicken in lemon juice in a large container. After washing the chicken place in dish and place in oven uncovered. Bake for 20 minutes. Remove from oven and remove the chicken from the pan. Drain the juices and then replace chicken. When you are ready cover with the Jerk Sauce.

      ~Jerk Sauce~

      1 teaspoon Jamaican pimento aka (ALLSPICE)
      1/2 teaspoon ground nutmeg
      1/2 teaspoon ground cinnamon
      1/2 cup finely chopped scallions (green and white parts) can sub with an onion
      4 Scotch Bonnet peppers OR 6 jalapenos (12 if you are brave), stems removed and cut in halves, retaining seeds
      1/2 cup distilled white vinegar
      1/4 cup soy sauce
      2 tablespoons vegetable oil
      1 tablespoon salt
      Pinch of garlic powder

      Combine all the ingredients in a blender or food processor. Process or blend on the liquefy setting for 2 minutes. Pour into a jar (because mixture will eat through plastic…JUST KIDDING) and refrigerate until ready for use. Jerk marinade WILL REMAIN good INDEFINITELY as long as it is covered and kept refrigerated. When you are ready pour mixture over the chicken in a dish and cover and refrigerate for 24 hours before cooking.

      When you are ready to cook the chicken, remove from the refrigerator and preheat oven to 425 dgrees F. After 5 minutes, place the COVERED pan(s) in the oven and cook for 20 minutes, Lower the oven setting to 275 dgrees F and cook for another hour, occasionally basting the chicken with the pans juices. Remove foil and broil for an additional 3 minutes. Take the pan(s) out and let cool for 5 minutes. You should know the rest… BUT it says…. remove the chicken and place on cutting board. Chop the chicken into bite size pieces then place chicken back into the dish with the sauce and let stand for 10 minutes to allow the meat to reabsorb the juices before serving.

      And it might be nice to serve the dinner with a nice mint flavored Rolaids because they are going to need it later!

        I make the same thing but I only use cream cheese and chopped black olives. Mix the two together and spread on a tortilla then roll it up and cut into pieces. Pretty good stuff!

        And I have had one made with refried beans, chopped onion (or scalions) and cream cheese… but I think you spread a little cream cheese then the beans and sprinkle the onion on top then roll it! Its pretty good too!

            I mean Amarillo doesn’t have anything like the Alamo or the river walk… we have the 10th street and plains blvd walk LOL (the old rail road tracks that they pulled up and put a walking path there… yeah.

            We have a crapy mall and a bounch of stuck up people that live on the SW part of town… (ever notice that is where the really big hail hits???) Not EVERYONE over on the SW part of town is stuck up but I’d say around 80%. 😛

            Palo Duro Canyon is Pretty and it does have BUGS…

                    This is just an idea… but for us weirdos that want the bigger dragons pink… what if we request them and that would make the numbers low, therefore only a few would be made (at request) and there would be no over stock???? I have no idea if that would work or not, its just an idea! 😉

                      20 minutes south is Palo Duro Canyon… its pretty there…

                          😳 sorry about the other thread….

                          I like the pinks, not a big fan but I really like them a lot!!! Pink mothers would be nice! 😛

                            Oh yeah! We have at least 3 of those on the block, and what kills me is that they come home and park it and PLAY that freakin music for like 10 minutes BEFORE they go in…. the whole time baseing their music like they think that we ALL wanna hear that stuff… 😡 And its past MIDNIGHT!
                            I have lost all faith in the APD. My sister in laws boyfriends shop got broken into, when the police showed up to take a statement all he did was yell at her for wasteing his time…

                              that doesn’t bother me in the least….what bothers me is the rich kid that can drive over the top of a goth kid…then back over him…and only get probation..(which he of course violated)

                              Or just Stanly Marsh… the weirdest of them all? Putting up pointless signs all over the city, putting WEIRD stuff on cars/trucks…(a fox and a chicken is one of them…on the roof…a stuffed chicken and fox….) 😯

                              yeah he still is the top weirdo…I used to work in the Chase building where he has offices…and OMG got stuck in the elevator with him….he smells EEWWWWY….

                              and yeah the signs and the fox and chicken and many other things….like kidnapping that Whittenberg kid way back when

                              Now when it comes to “laws” around here, they are not weird, they just PLAIN SUCK! Get a speeding ticket and not pay it, goto jail, kill someone and get a slap on the hand. WHAT IS UP WITH THAT??? That was so wrong! 🙁

                                  Amarillo is growing too. Five O’ clock traffic here is a small pain in the butt but not TOO bad. I call our down town “little New York” because of the way some people drive it! LOL.
                                  But they are not taking down any forest since most of the trees around here are Elm trees that people have planted and well, they took over. Its pretty flat around here though. Just farm land and grazing land here. With some prairie dog towns inbetween. But 20 min away is Palo Duro Canyon… it is very pretty there! We hope to move sometime in the future… I guess we’ll see what happens.
