    Gumbo = Anything you throw in the pot.

    I don’t care for okra and I rarely cook it. Gumbo is a soup that you can put anything in.

    Usually it is with a roux (equal parts oil and flour cooked slowly until golden brown) and it is used as a thickening agent/ stew base

    AMEN! I agree! The housing market needs to come back into check. Things are way out of control. I do think that the government needs to force lenders to make sure buyers understand the terms of the loan. I totally agree about interest only loans. They are as bad as ARM loans and to me they don’t make sense.

    I consider my house as part of my retirement. I dealt with my loan as carefully as I would deal with my 401k. I want this baby paid off before I retire. Then I know I won’t have to pay rent or a note once I decide to retire 🙂

    The whole problem is, adjustable rate mortgages are like making a deal with the devil.

    They look fantastic, wow, get a house for $200 or $300 less a month than a fixed rate loan. What a deal! Most people are fooled into thinking that the bank is doing something fantastic. They buy in and them BLAM!

    Ohh, sorry, what? You didn’t realize your mortgage payment was going to increase by $500 per month when interest rates go up?

    Sorry, didn’t you read the fine print? Ohh well, too bad, so sad…now you can declare bankruptcy.

    The whole thing is a mess. Banks should be required to make it very clear what you get, when you get an ARM. I truly think most people who are involved in this whole mess are in it because they did not understand what was going to heppen when rates went up.

    Many people will do what the lender recommends. A lender says they have this great deal and the customer thinks that the lender must know what is best.

    The other thing people need to stay away from is interest only loans. The best thing for potential home owners, is get a fixed rate loan and if interest rates go down, refinance with another fixed rate loan.

    I am sorry people are loosing their houses, but you must be very careful in believing any lender and understand that they are not looking out for you. They want to make money and that is the bottom line.

    When we have bought or sold homes we do it without a realtor and with a trusted property lawyer. We also don’t do the whole escrow deal (that is another way the banks like to screw people over) but I won’t go on about that.

    Be savy and research and talk to a property lawyer before you sign into any agreement.

    Nah…the gumbo they sell that is supposed to be “Cajun” is usually so full of pepper it is nasty. Real gumbo is kinda like chicken soup, nice flavor, not spicy.

    Here is an easy no roux recipe:

    1 rotisserie chicken, deboned
    2 to 3 large links of any type smoked sausage
    1/2 cup diced onion
    1/4 cup diced bell pepper
    1/4 cup diced celery
    Water
    Chicken bullion cubes
    Salt, Pepper and Garlic Salt (to taste)
    Poultry Seasoning
    Kitchen Boquet

    Slice sausage and the cut circles in 1/2 or 1/4ths
    Brown sausage in a nonstick pot or in a cast iron dutch oven.

    Then add in celery, onions and bell pepper and cook down until soft.

    Add Water, depending on how much you want to make.

    Add deboned, deskined chicken pieces that have been sprinkled with the poultry seasoning.

    Throw in as many bullion cubes as you need for the amount of water you added and then ad a few extra for good measure.

    Bring right up to a boil and then turn it back down to simmer. Add in a little salt and a little pepper to taste and a light dash (less than a teaspoon) of kitchen boquet for a dark color (be careful not to put too much Kitchen Boquet).

    Let it cook a little while and season to taste. Cook some rice and put a little rice in a bowl and then spoon the gumbo over the top.

    I never measure anything when I make soups, I just add to taste.

    Just figured I would throw it out there. I would be willing to pay a premium for one. It is the only one I need to complete my whole set.

    I would prefer mint White Hatching Empress, but would consider one with damage also.

    I have an old fashioned cast iron dutch oven and I am gonna try this recipe tonight, obviously, I did have to buy meat from the grocery store and I got a sirloin roast. So I will try it out.

    I agree. Nurses are very picky about Physicians and other health care providers. If you know a Nurse or Nurse Practitioner or even a Nurse Midwife. They should be able to give you some advice about who to see.

    If you like your OB, then great, but with you being high risk you should get at least two opinnions. You should also be seeing someone who specializes in this kind of high risk pregnancy. You do have the right to make choices and plan ahead. Do not let anyone take the choice away from you! You should have a doctor that you trust and feel good about.

    Lovenox and other blood thinners are nasty drugs to deal with, even if you weren’t pregnant. I am guessing you were on Coumadin prior to this, which is also a nasty drug.

    Good luck, I hope you start feeling better! I am sorry for all of this to be happening to you, but hopefully things will improve.

    I am 37 and don’t have any kids either. I love kids, but did Pediatrics for 8 years, so I really don’t know if I could handle little people 24 hours a day. My pets are my children. So I completely sympathize with you. I am sure as you get farther along you will naturally feel more maternal. Nature, God, whatever you believe in, instills that maternal instinct in most mommas, no matter if it is a cat or a dog or a human.
