      Hi, new to this thread, longtime lurker of the forum. Thought I’d post a pic of a recent meal I made that I was super proud of.
      Eggplant Parm!

      I cut up eggplant into 1/2 inch thick pieces, coated them in a beaten egg & Panko bread crumbs (that I mortar & pestled smaller along with some added herbs of Oregano & Basil), dabbed on some tomato sauce, added more Oregano & Basil, sprinkled with fresh parmesan cheese, & added sauteed mushrooms, topped with fresh mozzarella cheese that I then broiled under the broiler for color- (we like our cheese bubbly brown in my household) & topped with fresh homegrown basil. It was soo good! 🙂

            That looks good! Do you bake it before broiling? What temperature and for how long do you cook it?

            Looking for rainbow or pink & teal grab bags!

              Hi, thanks! Yes, I baked it at 425* before broiling them off at the end. I baked mine 20 minutes give or take (10 mins on each side- they were thickly cut- so you would adjust time for that or how hot your oven runs, etc.)- Just cook them through to fork tender.
