Do you guys want the recipe?Yes please! I order it often when I go to Bennigan’s theirs is pretty tasty! 😀 I’d love one for home!
January 10, 2010 at 5:48 pm #798411This is quite a bit less fatty than the typical artichoke spinach dips out there, but it still tastes just as good. My family commented, afterward, that it was better than what they had at Applebees. When I told them I used yogurt in place of sour cream they were surprised but agreed if anything it added a lovely subtle tangy flavor. It’ also has a lot less salt. It’s not guilt-free, but it’s a lot less guilty!
For comparison, check out the nutrition on their dip: http://www.myfitnesspal.com/food/calories/applebees-hot-spinach-and-artichoke-dip-with-tostida-chips-432548
Then compare to the ingredients you use. 🙂 After you drain the artichokes, the ‘worst’ part for you is the cream cheese.Nam’s Spinach Artichoke Dip
Ingredients1 cup thawed, chopped frozen spinach OR fresh spinach, lightly boiled till tender
2 6oz. jars of marinated artichoke hearts (I prefer the Centro brand, less oil)
4 ounces cream cheese
1/4 – 1/2 cup of low-fat or non-fat plain yogurt (if you want a thick dip, use 1/4… if you want a smoother dip use 1/2)
1/4 cup low or reduced fat mayonnaise
1/3 cup grated Parmesan plus a few pinches
1/2 teaspoon red pepper flakes
1/4 teaspoon garlic powderDirections
Drain artichoke hearts of all oil well. I will then pat them with a paper towel to wick away any extra pooled water/oil. You’re removing most of the fat when you do this. Chop them roughly to prevent huge chunks in your dip. Soften cream cheese (for me, 1 minute on defrost in the microwave works. Beware getting it too hot at it tends to blow up!!) then combine all ingredients except a few pinches of parmesan. Add the final few pinches of parm to the top.
Serve cold or hot- if you want it delicious and melty, place the dip in a oven-safe bowl and broil until the parm on top melts and it’s all gooey. You’ll need to watch it carefully to make sure nothing burns. In my oven it takes about 10 minutes.
Serve with your cracker or chip of choice! This is very good with dried pita chips.Volunteer mod- I'm here to help! Email me for the best response: nambroth at gmail.com
