    FYI in case you don’t know Chitlins, often spelled chitterlings, are a type of food made from pig intestines. In the US, they are a common southern food offering, though their cleaning and preparation can take a good deal of time. They are especially popular served during Thanksgiving and Christmas. Because chitlins are intestines, they have to be cleaned with extreme care. They can contain fecal matter, which can translate to ingesting numerous forms of bacteria including E. Coli, yersinia, and salmonella. If chitlins are sold uncooked, they need to be cleaned, and hand picked of any remaining fecal matter. Guides on cooking chitlins often suggest boiling them for 5 minutes to sterilize them prior to preparing them.

    They have a Huge Chitlin festival in a nearby town every fall. Even though many people swear they are “some good eatin” I Think I’ll pass.

    And yes I know that the casings for sauges and such are made from intestine as well πŸ˜†

      It basically is. Its just layers of fatty pig flesh with a little meat thrown in for crunch.

      I put viniger and bacon bits and all types of spices in my tuna fish, which squicks my mother out. My husband makes this unholy dish called “Zack Suprise” it’s made of hot dogs, bbq sauce, sweet and sour sauce, pasta and some other goo. The suprise is that if you eat it you puke! He’s not allowed to make it if I’m home, only when I go to my parents house, and the dishes have to be washed, and the candle burning, cause it smells like baby poop.

        We make a dish called “deviled chicken” it has a flavor similar to deviled eggs. You rub your chicken in a mixture of butter, brown mustard and pickle relish sweet cubes, and a little salt and pepper. then broil it. We serve it over rice and usually with deviled eggs. πŸ˜€

        Chicken levers. A simple plate of boiled chicken levers. I don’t hate that at all, especially if they are baked to almost black. I eat chicken lever several times a week, with several kinds of food. I eat it in prevent for my periods; these once-a-month periods are very hard for me in many ways. I loose lots of blood, I feel painful enough to vomit and I have huge headaches. I take strong painkillers to heal my pain, while the chicken lever brings me enough iron to prevent me from falling unconscious (because of “iron level” dropping). As a matter of fact, since I put chicken lever in my menu, “iron droppings” have cured to about 70%, I would estimate. 8)

          It looks strange on the plate, my mother in law refused to eat it….but others who have tried it really like it

          We’ve had more than a few recipes end up like that. My husband and I both like to cook. He loves to do Indian food.
          Have you posted the recipe? or could you PM it to me? I think it sounds good. My family loves deviled eggs πŸ˜€

          My sister has a similar problem. She has to really watch her iron. Of course it doesn’t help that she is a vegetarian who does not like most dark green veggies πŸ˜• πŸ˜† We just get creative with the cooking.

            I’m a fly-by-the-seat-of-your-pants type cook…that pretty much IS the recipe!! πŸ˜† I know you use more brown mustard than butter, and get the big “sweet cubes” not “relish” because the cubes add better flavor…I wish I could be more help. πŸ˜†
