        :hi: This is a delicious recipe for people that like southern “cajun” cooking.True cajun cooking is “spicey”not necessarily HOT”.The heat comes from how much cayenne and other peppers you use.It has some heat,but,my recipe is “warm”.Try it,might like it.Here goes.
        If you have “Zatarains”or any other boxed jambalaya where you are,this is easier than scratch home-made.This is a short cut but just as tasty.Feeds 6 withside dish and salad,great meal if you are looking for something different.It is a rice dish.
        1 box of Jambalaya rice mix
        1 deboned chicken breast/cut in bite size pcs.
        1lb.of smoked or Kiebasa sausage/cut in slices
        1 lb. of medium to small shrimp/shell and wash very well
        4 scallion onions/diced
        1 med.tomatoe/diced or a can of ro-tel diced
        3 celery stalks/diced
        1/2bell pepper/diced {1/2 red pepper if you want also}
        1/2 tsp. cayenne pepper
        2 chunks of garlic/diced
        any creole or cajun spices you may have will inhance the flavor
        Season your meats to taste,garlic,salt,oinion,etc. before you cook them, seperately! If you add them all at once,you will have a goulash instead of Jambalaya. Believe me,it DOES make a difference in how it taste.
        NOW,As the water for the rice goes on,add a 1/2 cup more water than required and you cook all the fresh ingredients,SEPERATELY,veggies first.All the vegetables should be sauteed lightly in a little butter and add to water beginning to boil.Cook chicken in pan/chuncked of course/season as you would for any chicken dinner.
        Add to water and rice mix.Cook on low heat,very slow boil.
        Cook sausage,add to rice.
        Cook and add shrimp last to rice mix. You let each meat cook a couple of minutes each ,with the rice,so,all flavors will come through.
        You add the cayenne ,black or any peppers you want to suit your taste.The heat.I mean.I prefer it mild.Stir ocassionally until the water is cooked out and rice is tender.
        Add a small side dish and/or a great salad. ENJOY and EAT SOUTHERN STYLE :yum:

                    I’ve had Jambalya once…It wasn’t too spicy, and I remember it being good, but this sounds much more interesting than what I had…There wasn’t nearly as much stuff in what I got! 😮

                      I’m sure that you’d have me breathing fire! The only bad part is I pay far too much for spicy foods, and therefore avoid the “too hot” ones.
                      Some one once told me when something is “too good” it doesn’t necessarily mean it’s bad for you though. I dunno, I’m still confused as to the meaning of “too good”. :scratch: (Not to be confused with “too good to be true”)

                        I’m a firm believer in…everything,well almost everything in moderation 😀 I cook with flavor and spice not hot,particularly.I have never smoked cigs so I have very sensitive tastebuds when it comes to “hot”.Cajun food is spicy,not necessarily hot.You add cayenne to taste.There’s your heat factor 😈
