I love noodle dishes with peanut butter. I found this easy dish which can be added too, eaten hot or eaten cold in Taste of Home. I think it’s a keeper basic.
Thai Noodles
8 oz Angel Hair Pasta
2 green onions sliced thin
1 carrot slivered (or grated)
1/2 cup chunky peanut butter
1/4 cup soy sauce
1/4 to 1/2 red pepper flakes
Cook pasta according to package directions
While that is cooking prepare vegatables and stir peanut butter, soy sauce and pepper flakes until smooth.
When past is done add 5 tablespoons of the cooking liquid to sauce mixture, drain pasta
Stir hot pasta water and peanut mixture together, add pasta, onion and carrot, toss to mix.
