I just have to share a recipe for my favorite waffles. And, yes! They are vegan 😆 and super, super easy to make.
Makes 4 healthy, yummy waffles
2 cups rolled oats
2 cups water
1 tablespoon sugar (I use Sucanat)
1 teaspoon vanilla
1/2 teaspoon salt
1 sliced banana
2-3 tablespoons of flaxseed meal
(and yes, thats it!)
optional additions
blueberries or any berries/fruit you like
some chopped walnuts
Combine all ingredients (except optional) in a blender. Pour about 1/4 of it onto waffle iron for each waffle, sprinkle on some chopped walnuts and blueberries. I’ve noticed that it needs a much hotter iron than usual waffles, but keep checking on it until its firm and slightly crispy. Feel free to top with butter (Earth Balance makes a nice buttery vegan spread) and maple syrup, fruit or whatever you like.
Enjoy! And when you eat up the first batch, its so easy to whip up another (and not feel guilty either!).
