Yes, I had a craving for Cucumber Cookies. I’d never heard of them. But man, did I want them…. (it’s a long story, but I assure you, I’m not pregnant!)
3/4 cup softened margarine
3/4 cup sugar
1 egg
1 tsp vanilla
2 cups all purpose flour
2 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/4 tsp nutmeg
1 cup cucumber, unpeeled, grated
1 cup shredded carrot
3/4 cup raisins
In a large bowl, beat together sugar and margarine.
Add egg and beat until well blended
Stir in vanilla
Sift flour, baking powder, baking soda, cinnamon and nutmeg into batter, mix thoroughly
Stir in cucumber, carrots, and raisins.
Drop by teaspoonfuls onto ungreased baking sheet
Bake at 375F for 15-17mins.
Ok…. I did that, and got burnt cookies!!! I’d recommend lowering the temperature quite a bit. 15 mins cooked the inside, but crispified the bottom… ick. Maybe 275-300F for 15mins.
I also forgot the vanilla and they tasted fine. Kinda like cucumber/carrot cake…. but in cookie form! :yum: :yum: :yum: :yum: :yum:
