I wanted to share my favorite cookie recipe.
Chai-Spiced Almond cookies
1/2 cup (1 stick) unsalted butter, room temp
1 & 1/3 cup powdered sugar, divided
2 teaspoons vanilla extract
1 teaspoon almond extract
3/4 teaspoon ground allspice
3/4 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup all purpose flour
3/4 cup finely chopped toasted almonds
Preheat oven to 350. Using electric mixer, beat butter, 1/3 cup sugar, both extracts, spices, and salt. Mix in flour, then stir in almonds.
Using hands, roll dough into tablespoon sized balls. Place on parchment lined baking sheet, spacing them about 2 inches apart. Bake until pale golden, about 20-25 minutes. Cool on sheet for 5 minutes. Place remaining sugar in a small bowl. Working in batches, gently coat cookies in sugar. Cool on rack, and then roll in sugar again when cooled.
Makes about 2 dozen depending on how large you make them.
I usually bake at least a dozen different kinds of cookies every year during the holidays, and this one is always a favorite. I love them with a cup of hot tea.
