      Thank you for dinner, it was nummy! I showed hubby the pics and he said, “Oooh…that looks good, are we making that, and I said, yep!”

      We tossed some green enchilada sauce in with the chicken while we cooked it and cheated by dicing it before sauteing. Then when it was done, we threw some salsa, guacamole and sour cream on top of the gooey goodness and chowed down.

        Ah but the beauty of it was that the oven only had to be on for a whopping 23 minutes. 8 mins for preheat, and 15 mins for the nachos…so it wasn’t that bad.

        It’s at least 35C in our apartment right now… so that’s 23 mins too long. πŸ˜† Ah well… next week school starts. Nice air conditioned school… ahhh……….

          LOL πŸ˜† I’m sure that would work…. it would at least melt the cheese (in record time… bought a slushie last night and it was half melted by the time I got to the apartment. Kinda kills the idea of a slushie… more like cold underflavored water…)
