This isn’t my recipe so thank you Ruthann for this one. It’s so good.
2 cups uncooked orzo pasta (looks like rice)
3/4 cup white sugar
1/4 tsp salt
1 – 16 oz can pinapple tidbits -reserve juice
1 – 16 oz can of fruit cocktail – reserve juice
2 cans mandarine orange sections – one can for decoration – reserve juice
2 slightly beaten eggs
2 tbsp corn starch or flour
1 large tub cool whip
Cook orzo according to pkg & cool
Cook reserved juice, sugar, salt, eggs and corn starch until it thickens then cool
Combine orzo and custard mixture and let set in refrigerator overnight (Very important step, don’t skip)
Next day add fruit (well drained) along with cool whip
Garnish bowl with second can of mandarine orange sections along with red and green cherries
Cool, serve and enjoy
